My version of Mamado’s Simple Chicken Curry

Preparation: 30 minutes

Cooking: 1 hour

Chicken 8 pieces of Woolworths skinless drums and thighs of 4 pieces each

Garlic 2 cloves, finely chopped

Onions 2 large, thinly sliced

Tamatoes 4 medium, roughly chopped

Patatos 2 large, roughly chopped

Curry 2T of Woolworths medium curry

Cajun Pepper 1T of Woolworths Cajun pepper

Sugar 1T

Water 3 Cups

Heat a large casserole with just enough cooking oil to cover the base of the casserole. Add the chicken pieces and brown on all sides. Remove the chicken and place on a baking tray in a preheated oven of 180 degrees for 20 minutes. 2. In the same pot add the sliced onions, garlic, curry powder and Cajun pepper and saute until the onions are glassy. 3. Add tomatoes, potatoes and a cup of water. Cook until water evaporates. 4. Add chicken pieces and cover with the curry. Add two more cups of water and let the curry slowly cook until the meat is soft and slightly fall from the bone. (Add small amounts of water if necessary.)
