Serves 4

What you need

4 Portobello Mushrooms

Baby Marrows 350g

Roasted vegetables 500g

Tofu 200g

Almond flakes 200g

What you do

  1. Remove the stems and gills from the Portobello mushrooms. Place them in a baking tray and partially bake them in a preheated oven of 180 degrees for 15 minutes. Remove from the oven and set aside to cool. 2. Roughly chop the mixed veg to a slightly smaller size which would normally be used for roasted veggies. Place in a baking tray, add a trickle of olive oil and roast for 15 minutes. When ready set aside to cool. 3. With a peeler peel ribbons of the baby marrows. Roast them in the oven for 12 to 15 minutes whilst keeping an eye on tem to not dry out or burn. Remove from the oven and cool. 4. Roast the flaky almonds in a pan. Watch them carefully as they really burn easily. 5. Use an electric hand blender and blend the tofu and a tablespoon of olive oil until it has a thick, creamy texture.

 

Stack’em: Line the inside of your stack ring with wax paper. Place your Portobello base first. Add your ribbons of baby marrows. Once again use the bottom of a champagne glass and firmly push down on the ribbons to form your stack. Next add the roasted mixed vegetables. Again the champagne glass. Next use a piping bag or cut the corner from a zip lock bag and pipe the tofu cream on the roasted veg. Add the roasted almonds. Bake in a preheated oven of 180 degrees for 15 minutes or until heated through.
